Ein Br\u00f6tchen vom Vortag in Milch einweichen. Zwei Schalotten fein w\u00fcrfeln und in Oliven\u00f6l in der Pfanne anschwitzen. Das Baguettebrot zu Paniermehl fein reiben.<\/p>\n\n\n\n\n\n<p>Die rohe Hackmasse in eine Sch\u00fcssel geben und mit Salz, Pfeffer, Paprikapulver, Curry und einem Essl\u00f6ffel Senf w\u00fcrzen. Das in Milch eingeweichte Br\u00f6tchen in einem frischen K\u00fcchentuch auswringen und gemeinsam mit dem Ei zu der Masse geben. Alles gut miteinander verkneten. Zum Schluss die fein gehackten frischen Kr\u00e4uter, die Kapern, die Sardellen, die angeschwitzten Schalotten und das Paniermehl hinzugeben und erneut verkneten.<\/p>\n\n\n\n\n\n<p>Die Hackmasse mit einer Suppenkelle portionieren und in befeuchteten H\u00e4nden zu gleich gro\u00dfen Klopsen formen. Einen gro\u00dfen Topf Wasser zum Kochen bringen. In das Wasser Nelken und Lorbeerbl\u00e4tter geben. Die Klopse im kochenden Wasser 15 Minuten ziehen lassen.<\/p>\n\n\n\n\n\n<p><strong>So\u00dfe<\/strong><\/p>\n\n\n\n\n\n<p>Zwei Schalotten fein w\u00fcrfeln und in Butter in der Pfanne anschwitzen und mit Salz, Pfeffer und Zucker w\u00fcrzen. Die Zwiebeln mit ca. einem halben Liter des Wassers, in dem die Klopse gegart wurden, abl\u00f6schen. Mit einem Schuss Essig, einem Schuss Kapernfl\u00fcssigkeit und frischen Kapern abschmecken. Den Sud einkochen lassen. In der Zwischenzeit Speisest\u00e4rke anr\u00fchren und Butter aufl\u00f6sen. Die Speisest\u00e4rke und die Butter unter st\u00e4ndigem R\u00fchren zu dem eingekochten Sud hinzugeben. Mit Salz, Muskat und Sahne abschmecken. Kartoffeln kochen, in Butter schwenken und mit Petersilie garnieren.
